While I was imprisoned at home due to Hurricane Sandy a month ago (and I am sad to report that some people are still in dire need of assistance, but also happy to know that many warm-hearted people are volunteering to help out, whether it is through donation, cooking hot meals, or even cleaning debris), I also spent a lot of time in the kitchen, baking sweets that I used to spend a lot of energy on. One of the sweet project was blondies because it is relatively easy to put together and who does not like a moist block of buttery goodness as comfort food? 🙂 Blondies also keep well in a tight container, that is if you could keep your hands away from them.
1/4 cup room temperature butter
1 cup brown sugar
3/4 tsp baking soda
2 beaten eggs
2 3/4 cup of all purpose flour
1/2 tsp cinnamon
2 1/2 tsp baking powder
1/2 tsp salt
1. Preheat oven to 350 oF
2. Cream butter and brown sugar together. Combine all the dry ingredients into a bowl.
3. Add the eggs. Stir gently, but do not over work it.
4. Spoon the mixture into a pan. Bake for approximately 25 minutes.
