I love to bake quick bread. Well, there is the keyword – ‘quick’ and who does not like fast result? Sure, an elaborate process yields fancy-looking creations (just stop by any pastry shops as you might drool involuntarily), yet sometimes a rustic piece of baked work can still satisfy one’s taste and hunger in a jiffy. Just sacrifice the appearance slightly.
So, I really enjoy one-pot baking session – less cleaning and more eating. Sounds like a win-win situation to me. 🙂
This quick bread is great for brunch, snack, or midnight munchies~
Chocolate Chips Milk Quick Bread
- 1 1/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- pinch of salt
- 1/3 cup sugar
- 1/2 cup chocolate chips (or any chopped chocolate you prefer)
- 1/2 cup butter, melted
- 1 cup milk
- 1 egg, beaten
- 1/2 teaspoon vanilla
Preheat oven to 375oF. In a mixing bowl combine flour, baking powder, salt, and sugar. Then toss in the chocolate. In a separate bowl combine and beat melted butter, milk, egg and vanilla. Fold wet ingredients into dry ingredients gradually.
Butter loaf pan. Pour in the batter. Bake approximately 30 minutes. Cool and serve warm.
PS you can also make muffins out of the batter, but only bake for 12-15 minutes and then check for doneness.
