Another Balanced Dinner For Mom

Mom has overtime this entire week. As a considerate daughter, I prepared another balanced dinner for her (carb, protein, vegetables).  I made an asparagus egg stir-fry for her. To add a bit of crunch, I tossed in diced water chestnuts along with the Chinese cabbages.  All of these went over a bowl of brown rice. To round out her late evening? A small wedge of sponge cake surrounded by sliced oranges.
