Recycled Ideas Are Just As Good…

It has been a hectic and crazy week.  Having returned from a trip, I had to plunge myself into work straight away (who wants to work during a vacation anyway…) In addition, unexpected events occurred that needed immediate attention, which took away some of my precious minutes.  So, when you are pressed for time, what do you do with your meals? Skip them? Never! I am not the type of people who sacrifices eating (unless there are health issues).  No matter how busy I get, I know I need ‘fuel’ because I need to honor my body as that is the vehicle that keeps me moving and thinking.  I am also not a take-out person.  I believe the last delivery I made was…a Domino order seven years ago.  So what’s a girl to do?? I ‘recycle old meals’.  But hey, the reason I remake a specific dish is also because it is enjoyable enough for a second (or third) consumption! A few days ago, I remade the lettuce wrap, only this time, it is ‘open-face’, so my mom had the freedom to wrap her own roll.  That plus another sautee vegetable and a bowl of rice (special help from the rice-cooker), dinner is served.

  1. This looks like a great quick-cooking meal for a busy night! A million times better than take-out! 🙂

    • I know, right? And I save some money for a nice meal out later too. 🙂

  2. 7 years…? Damnn, I don’t think I could go a week without getting takeout haha.

    • Probably because I’m tired of ‘waiting’ for my food, so might as well just make it myself.

  3. wow, seven years. Domino’s is a good choice though. But yea, you’re a trouper for always finding time to cook dinner. Those tofu chunks look pretty tasty!

    • Rather than sitting around the phone, waiting for my food, might as well make my own. Besides, would rather save the money for dine out at a nice restaurant instead.

Those tofu chunks were bought at Chinese supermarket. They’re the marinated dried tofu. They’re awesome beacuse it’s an easy way to get protein (I’m a vegetarian) for a salad or a vegetarian stir-fry.

      Thanks for dropping by!
